Ingredients
1 tbsp olive oil
2 green onions, chopped (plus extra for garnish)
2 medium white onions, diced
2 garlic cloves, chopped
½ cup carrots, chopped
1 tbsp tomato paste
2 cups oyster mushrooms, chopped
2 tbsp parsley, chopped (plus extra for garnish)
1 tsp ground black pepper
½ tsp salt
½ cup dry pasta
½ tbsp lemon juice
5½ cups hot water
Preparation
1. Sauté the Veggies
Heat olive oil in a large pot over medium heat. Add green onions, white onions, garlic, and carrots. Cook until tender, about 5 minutes.
2. Build the Base
Stir in tomato paste and cook for 2 minutes to deepen the flavor. Add chopped oyster mushrooms, parsley, salt, and black pepper. Cook over medium-low heat for 10 minutes, stirring occasionally.
3. Add Pasta and Simmer
Add dry pasta, lemon juice, and hot water to the pot. Stir well, bring to a boil, then reduce the heat and let it simmer for 15 minutes, or until the pasta is cooked and the flavors meld together.
4. Garnish and Serve
Ladle into bowls and top with fresh parsley and green onions. Serve hot and enjoy the comforting, earthy flavors!
